Winemaker Notes
The grapes for out 2007 Chardonnay were harvested before dawn to allow the fruit to be brought to the winery cold. After crushing and pressing, the juice was fermented in small oak barrels over approximately four weeks. During this time, the lees were stirred often. This chardonnay was aged for eleven months in 60-gallon French oak barrels and bottled in the early winter of 2008.
Tasting Notes
This 2007 Reserve Chardonnay begins with notes of apple and pear. Flavors of citrus and pear predominate in this richly textured wine, mixed with accents from the small oak barrels. Significant acidity imparts a fresh clean finish. Excellent paired with rich creamy cheeses, many fishes, and fish bisques and chowders.
