Our 2018 Roller's Song Cabernet Sauvignon grows on Bill and Yvonne's home property in Alexander Valley. The 45-acre Kreck estate ranch has thin soils and a western slope, which is ideal for producing high quality fruit. The name honors Yvonne's father who raised German Roller Canaries on the property in the 1940s and 1950s. As with all Mill Creek wines, the fruit is harvested early in the morning. The 2018 vintage was hand-picked on October 26th and 27th 2018. After the fruit was delivered to the winery, the clusters were gently de-stemmed, crushed and then filled into stainless steel tanks for a 4-day cold soak. The must was then inoculated with BDX yeast and transferred into temperature controlled stainless steel fermenters. After pressing, the wine was aged in 33% new French oak barrels 24 months.
The nose on this wine is classic Cabernet Sauvignon showing ripe Bing cherry and Blackberry with a hint of sweet spice. The mouthfeel is full and silky showing red fruit, dark chocolate, and a touch of coffee. The tannins offer a rich midpalate finish complementing this wine’s structure and opportunity to age and cellar. Paired with Gorgonzola cheese and figs as an appetizer, or rack of lamb or roasted duck as a main dish.
